The 'Options' window has four tabs, the first of which covers:

• CD-ROM access method
• CD ripping speed
• Output folder
• File name format.

You can select the output folder by browsing and you can create a subdirectory for Artist and Album. For recognizing the file, you can choose to set the file name format to be one of the predefined presets or enter it manually.
